Journal - Pineapple Jam




This is what my monsters and I are doing right now. We are making pineapple jam. Its almost the Chinese New Year and I still haven't found the perfect pineapple tart. Most that I have tried - the pineapple jam is too hard and sweet. So I have decided to give it a go this year. I haven't made pineapple tarts in a long long time - so this will be akin to not riding a bike after a long while.

What are the ingredients to a homemade pineapple tart? Well, you will need some ripe pineapple, cloves, a stick of cinnamon and some star anise. Firstly, we grate the pineapple finely. It would be wise to toast the spices to increase the aromas of the spices - which I didnt do because I forgot. Told ya I haven't made this in a long time. Then we combine the ingredients together and cook it for a long, long, long time until it turns golden yellow in colour upon which most of the pineapple juice has evaporated. Then its ready to be served either on bread or we make a pastry and bake it to make pineapple tarts.

Thanks Shar and Liza. I think its ok but I forgot to toast the spices. Sigh.. Blur blob... again....
